Green chile sauce

Basic Green Chile Sauce

  • 3 tbs cooking oil
  • 1 lb meat
  • 1 small onion, chopped
  • 4-6 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp black pepper
  • Salt to taste
  • 1-2 tbs flour
  • 1 potato, cubed
  • 6-8 cups water or two 32 oz boxes of chicken stock
  • 6 tbs powdered green chile or 1/2 - 1 cup crushed green chile

Saute meat, onion, garlic, and spices in 2 tbs oil until cooked. Move meat mixture to side of pan and lightly brown flour in remaining oil. Add remaining ingredients and simmer 20 minutes. Mash potatoes for added thickness. Serves 8.

Green Chile Stew

  • 3 tbs cooking oil
  • 1-1/2 lb pork or chicken
  • 2 medium onions, chopped
  • 6-8 garlic cloves, minced
  • 6-8 medium potatoes, cubed
  • 6-8 cups water or chicken broth
  • 6 tbs powdered green chile or 1/2 - 1 cup crushed green chile
  • 1/2 cup chopped cilantro
  • Salt to taste

Optional seasonings:

  • 1/2 tsp cumin
  • 1/2 tsp oregano
  • 1/2 tsp coriander
  • 1/2 tsp black pepper

Saute meat, onion, and garlic in oil. Add liquid, potatoes, chile and seasonings and simmer 30 minutes. Traditional green chile stew has virtually no seasonings. We like to spice ours up a bit. Serves 8-10.
