On my Santa Fe (May 2011) trip, I bought tons of red and green chile there. I also got a wealth of information about Chimayo chile (including recipes for red chile sauce and green chile sauce) from Raymond, one of the owners. He's going to call me in November when the Chimayo chile is available.
