Turnip cakes. Actually daikon radish (무) cakes.

Ingredients

  • shredded daikon radish
  • dried shitake mushrooms
  • Chinese sausage, bacon, or some similar cured pork
  • rice flour

You want about a 6:1 ratio by weight of radish to rice flour. Four pounds of radish will yield about two 8" cake pans.

Recipe

  1. Shred the radish
  2. Finely dice the mushrooms and pork
  3. Cook the pork and mushrooms. Take it off heat.
  4. Cook the shredded radish in the same pot until translucent. It took me about 30 minutes to cook four pounds.
  5. Stir in pork and mushrooms
  6. Gradually mix in the rice flour until you have a thick, batter-like consistency
  7. Place batter in greased cake pans
  8. Steam each pan for 45 minutes
  9. Chill, slice, and sautee
