Turnip cakes. Actually daikon radish (무) cakes.
Ingredients
- shredded daikon radish
- dried shitake mushrooms
- Chinese sausage, bacon, or some similar cured pork
- rice flour
You want about a 6:1 ratio by weight of radish to rice flour. Four pounds of radish will yield about two 8" cake pans.
Recipe
- Shred the radish
- Finely dice the mushrooms and pork
- Cook the pork and mushrooms. Take it off heat.
- Cook the shredded radish in the same pot until translucent. It took me about 30 minutes to cook four pounds.
- Stir in pork and mushrooms
- Gradually mix in the rice flour until you have a thick, batter-like consistency
- Place batter in greased cake pans
- Steam each pan for 45 minutes
- Chill, slice, and sautee
