Curry laksa

Malaysian street noodle soup. I'm making it for The Ghost Bride Release Party on August 23, 2013. I've only had it twice — once at Azalina's and once at Lime Tree Southeast Asian Kitchen — and I'm not familiar with the ingredients, so I'm going to improvise.

Garnished with sambal and cilantro.

Spice Paste

  • Two thumb sized pieces of turmeric
  • 10 slices of galangal
  • 25 dried red chiles, softened, or dried chili powder
  • 7 candlenuts (buah keras/ kimiri)
  • 2 tbsp belacan
  • 15 shallots
  • 6 stalks lemongrass (white only)
  • 1 tbsp ground coriander
  • ginger
  • garlic

Broth

  • coconut milk

Recipe

  • Rice noodles.
