Curry laksa

From Burden's Landing

Malaysian street noodle soup. I'm making it for The Ghost Bride Release Party on August 23, 2013. I've only had it twice — once at Azalina's and once at Lime Tree Southeast Asian Kitchen — and I'm not familiar with the ingredients, so I'm going to improvise.

Serving size for 4.

Spice Paste

  • One red onion
  • One inch piece of turmeric
  • One inch piece of ginger
  • Garlic
  • 6 stalks lemongrass (white only)
  • 1 tbsp ground coriander
  • 1 tbsp ground cumin
  • dried chiles, softened
  • 1/3 cup almonds, candlenuts (buah keras/ kimiri), or macadamias
  • 2 tbsp belacan

Roast spices and nuts. May need to hydrate and soften belacan for 30 minutes. Grind ingredients together.

Broth

  • Shrimp broth or chicken stock
  • Cinnamon
  • Star anise
  • Cardamom
  • Cloves
  • Coconut milk

Recipe

  • Rice noodles
  • Bean sprouts
  • Hard boiled eggs
  • Puffed tofu
  • Shrimp
  • Lime
  • Cilantro

Stir fry spice paste. Add broth, spices, bring to boil for five minutes. Add coconut milk, simmer for another few minutes.

Boil rice noodles. Add broth to noodles and other accoutrements. Garnish and serve.
