Malaysian street noodle soup. I'm making it for The Ghost Bride Release Party on August 23, 2013. I've only had it twice — once at Azalina's and once at Lime Tree Southeast Asian Kitchen — and I'm not familiar with the ingredients, so I'm going to improvise.
Serving size for 4.
Spice Paste
- One red onion
- One inch piece of turmeric
- One inch piece of ginger
- Garlic
- 6 stalks lemongrass (white only)
- 1 tbsp ground coriander
- 1 tbsp ground cumin
- dried chiles, softened
- 1/3 cup almonds, candlenuts (buah keras/ kimiri), or macadamias
- 2 tbsp belacan
Roast spices and nuts. May need to hydrate and soften belacan for 30 minutes. Grind ingredients together.
