- Equal parts Chimayo chile and ground coffee
- Equal parts cumin, coriander. Should be about 1/2 - 2/3 of the chile / coffee mixture
- Salt. Should be about 2/3 of the chile / coffee mixture
- Sugar. Should be about 1/2 of the salt
Magical on beef. Good on duck. A waste on pork. Haven't tried it with chicken.
You can also do a braised version, using chile flakes instead of powder and brewed coffee instead of ground. Same meat combinations apply.
