Made the same way as apple cider vinegar.

Started a vinegar from the cores and stems leftover from making pear wine. Added them to a jar, filled with about four cups of boiled, then cooled filtered water, four tablespoons of sugar, and some raw apple cider vinegar. Covered with cheesecloth.

Removed cores and stems, then added leftover mash from pear wine, transferring everything to a gallon jar. Loosely covered with cap, because I was afraid the pear mash would rise and separate (which did indeed happen).

Removed mash, filtered and transferred to a half gallon jar. Covered with cheesecloth.

Tasted and bottled. A little sour — may have let it go slightly longer than optimal — but tastes nice! Fit two 500mL bottles + a little jar for the dregs, which I'll use for my electrolytes mix.
