Spicy ginger barbecue sauce
From Burden's Landing
Rub:
- 1/2 c granulated salt
- 1/2 c sugar
- 1 t cayenne
- 1 t ginger powder
- 1 t garlic powder
- 1 t black pepper
Sauce:
- 2 T vegetable oil
- 2 oz minced garlic
- 4 oz minced ginger
- 8 oz minced onion
- 6 oz tomato paste
- 16 oz chicken stock
- 4 oz red wine vinegar
- 1 stick cinnamon
- 4 pc star anise
- 4 chili pods
Heat oil over medium high heat and add garlic and ginger. Add onion and reduce heat to low. Sweat onions, then add tomato paste and cooke until the color changes to brick red. Add stock, vinegar, and spices and simmer for 30-40 minutes, covered. Remove the spices and season to taste with salt and pepper and vinegar.
