Quesabirria

Based on Tejal Rao's adaptation of Josef Centeno's birria and tacos recipes.

Ingredients

Serves 8-10

For birria:

  • 2 poblano chiles
  • 5 guajillo chiles
  • 5 pounds bone-in beef shoulder, cut into large pieces, or goat or lamb stew cuts on the bone
  • Salt
  • Neutral oil
  • 1 onion, chopped
  • 1 can crushed tomatoes
  • Vinegar
  • Garlic
  • Ginger
  • Oregano
  • 2 tspn toasted sesame seeds
  • Cumin
  • Cloves
  • 1 cinnamon stick
  • Bay leaves

Tacos:

  • Corn tortillas
  • Fresh cilantro
  • Limes
  • Jack cheese

Recipe

  1. Char and skin poblanos
  2. Toast and soak guajillos, saving water
  3. Sear meat. Remove, and cook onions in pot
  4. Blend tomatoes, vinegar, garlic, ginger, oregano, sesame seeds, cumin, cloves, black pepper, poblanos, guajillos (and soaking liquid)
  5. Cover meat and onions with blend, add bay leaves and cinnamon, cover meat with water, and braise until meat is tender
  6. Heat birria fat on cast iron. Dip tortilla on both sides, then add cheese and shredded meat. As tortillas brown, fold in half. Get it nice and crispy.
  7. Serve with chopped onions, cilantro, and lime
