Pineapple sorbet

Recipe

  • 2 cups pureed pineapple
  • 1 cup water
  • 4 tbsp lemon juice
  • 12 tbsp sugar
  • 4 tbsp vodka

Notes

Like the grapefruit sorbet recipe, based on Harold McGee and experimentation. The vodka/sugar combo is about equivalent to 22 tbsp sugar.
