Jerk rub

Equal parts:

  • All spice
  • Cloves (maybe a bit less)
  • Cumin
  • Coriander
  • Thyme

Combine with fresh garlic, ginger, and habanero for a wet rub.

Tastes awesome with grilled or roast chicken or duck. Also great with braises: pork, lamb, etc.
