Classic thing to do is to make stock. Boil for 20 minutes with dried shiitake mushrooms and dried anchovies ([[멸치]]). If you want to make a vegan version, do without the anchovies. Grind the stock ingredients with soy sauce and rice vinegar, and you'll have a tasty paste you can add to rice and stir fries.

  • 4-5 hours to sun dry
  • Don’t overlap them while drying
  • Releases slime as stress response. The longer you wait to process, the more it exudes.
  • When crisp and rigid, done drying
