Delicious, South Indian fry bread that puffs up into a wonderful, greasy pillow. Often served with chole.
Ingredients
- 2 cups flour
- 1 tsp baking powder
- 1/2 cup yogurt
- 1 tsp sugar
- Salt to taste
- Water as required for kneading. May need less (or not at all) if yogurt has whey.
- Oil for frying
Many recipes call for maida, which is similar to cake flour. Some also call for some whole wheat flour. I'm trying with just all-purpose flour. You could also use try 1/2 cup mashed potatoes to replace part of the flour and the leavening / fermenting agents. Some recipes also call for a little bit of semolina or rice flour.
Recipe
- Mix dry ingredients.
- Add yogurt. Knead and slowly add warm water (if necessary) to form dough.
- Cover the dough and set aside in a warm place for at least three hours and up to overnight.
- Divide the dough into 12 equal portions, roll them into balls, and cover.
- Roll ball into disc about 5-6 inches in diameter.
- Heat oil in pan over medium heat, and fry each side until golden brown. It should puff up each time. Press the center lightly with a spoon to help the puffing.
