A Man-popover -- manover. Also known as a German pancake or a Dutch Baby. Serves two or one hungry man.

Recipe

  1. Preheat oven to 425.
  2. Put 1 Tbsp butter into 8" fry pan and stick in the oven.
  3. Pour 1/4 cup milk in Pyrex measuring cup.
  4. Crack an egg into it.
  5. Add a splash of vanilla.
  6. Whisk it all together using mini whisk.
  7. In a 1/2 cup dry measuring cup, spoon 1/4 cup AP flour.
  8. Add 1/2 tsp sugar + 1/8 tsp salt + healthy dose of cinnamon. Mix together (delicately, as you're working w/a small vessel!).
  9. Add dry ingreds to the wet ingress into the Pyrex measuring cup. Whisk well to combine.
  10. Make sure the butter (now melted & possibly browning) is spread all over the surface of the fry pan. Pour batter into the pan.
  11. Let cook for 18-19 mins or until brown & puffy.

Meanwhile, rinse out the Pyrex cup, then add 1 Tbsp sugar & some cream (1/3-1/2 cup? -- can't remember). Add dash of vanilla or almond extract. Stir well & let sit in fridge for about 10 mins (to give sugar a chance to dissolve. Whizz with the milk frothier until whipped. Keep whipped cream refrigerated.

Try making it in a cast iron skillet for more smokiness and caramelization. Inspired by the Dutch Baby I had with EJ at Maison Cafe in Dana Point on December 28, 2018.
