Lentil soup

The key to this soup is to simmer a tomato sauce while prepping all the other ingredients. You can also just use a pre-made tomato sauce.

Ingredients

  • 1 pound lentils
  • 2.5 quarts stock or water
  • 1 large onion chopped
  • 2 large carrots chopped
  • 3 ribs celery choppped
  • 3 cloves garlic minced
  • 3 bay leaves
  • 1 can whole tomatoes
  • 1/4 cup olive oil
  • 1 pound mushrooms

Makes about 10 servings.

Recipe

Roughly puree tomatoes. Simmer in olive oil and spices while prepping the other vegetables.

Combine everything except mushrooms, cover partially and bring to simmer for 15 minutes. Add mushrooms. Simmer until everything is soft, about 45 minutes.
