Cranberry orange bread

This recipe adapted from an Ocean Spray recipe.

Ingredients

  • 2 cups flour
  • 3/4 cup sugar
  • 1-1/2 tsps baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup orange juice, preferably freshly squeezed
  • 1-1/2 tablespoons grated orange peel
  • 1/4 cup canola oil
  • 1 egg, well beaten
  • 1-1/2 cups fresh or frozen cranberries

Directions

1. Preheat oven to 350ºF. Grease a 9 x 5-inch loaf pan.

2. In a medium mixing bowl, combine flour, sugar, baking powder, salt, and baking soda. Set aside.

3. In a small bowl, whisk together egg, orange peel, oil, and orange juice.

4. Pour orange juice mixture into flour mixture and stir just until blended.

5. Fold in cranberries.

6. Pour batter into loaf pan.

7. Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack for 15 minutes. Remove from pan; cool completely. Wrap and store overnight.

Notes

Even though there's no butter in this recipe, the cake is very moist due to the juice.
