Cornbread
From Burden's Landing
This recipe is from the bag of Bob's Red Mill 100% Stone Ground Cornmeal.
- 1 cup stone ground cornmeal (regular, fine, or coarse grind -- depending on your preference)
- 1 cup whole wheat pastry flour
- 1/2 tsp salt
- 4 tsp baking powder
- 1 Tbsp. sugar
- 1 large egg
- 1 cup milk
- 1/4 cup butter, softened
1. Sift together dry ingredients into bowl.
2. Add egg, milk, and butter. Beat until smooth, about 1 minute. Do not overbeat.
3. Bake in a greased 8-inch square pan for 20 to 25 minutes at 425 degrees F.
