Apple galette

Ingredients

  • Pie dough
  • About a pound of peeled, cored apples sliced thin
  • 1/8 cup brown sugar
  • Cinnamon, nutmeg, and whatever spices you want to use to taste. I'm generous with mine.
  • 1/2 tsp cornstarch or 1/4 tsp agar agar
  • 1 small lemon or 1/2 large lemon
  • 1 egg

Recipe

  1. Preheat oven to 400 degrees
  2. Mix apples with sugar, spices, starch, lemon juice, and lemon zest.
  3. Roll out pie dough on parchment paper to 12ish inch circle. Place paper on baking sheet.
  4. Layer apples in the middle. Fold dough over on edges, crimping them together to form a seal.
  5. Beat egg, then brush onto crust. Added granulated sugar for added delight.
  6. Bake for 45 minutes. Crust should be brown, apples should be soft and caramelized.
